Return the pan to a medium heat and gently fry the garlic, ginger and chilli in a teaspoon of oil for about a minute until fragrant. Return the chicken to the pan and stir in the sauce.
Add the cumin, turmeric, paprika (or cayenne), salt, lemongrass, lime leaves and chilli. Mix to combine, then add the nuts and seeds. Using clean hands, toss the mixture and rub in the buttery spices.
