At Locust Grove Smokehouse in Argyle, a family-run meat processor and slaughterhouse, a rise in custom meat cuts, which owner Dean Tripp said is spurred by online trends, is slowing down production.
The park will use “all available tools to decrease” the bison population when the herd exceeds 5,200 animals. The goal is a herd of 3,500 to 6,000 animals.
