If coming to a stop that'll be to neutral or first, if doing a rolling start it'll be the gear that works for the speed. Caveat, on track I heel and toe through the gears as it gives better balance and control, but you shouldn't need that for street driving.

As the person is saying above, you can feel it for most cars it doesn't take long. Driving a manual car is a dance with the clutch pedal, gas/brake and shifter.
