I feel the right place to start is when your streamed hours watched, plus 1/4 of your recorded content hours watched push around 8000-10000 hours a month (so I'm nearly there). I'm not impressed at all with any of the merch stores out there.

At a few thousand subs you arent going to do much. People with millions of followers do huge numbers. Imagine david dobrik, 18 million subscribers. If only 1% buy his merch in a given year then he will sell 180,000 shirts. 180,000 X 25 = $4,500,000. I would be absolutely amazed if he didnt sell far far more than that.
